If price isn't an issue, I would suggest staying at the Disneyland Hotel, in the concierge suites. You have access to the private concierge level with a great view of the park and the fireworks, plus the room is sync'd to the fireworks soundtrack, just as it is in the park. The room is also always stocked with complimentary refreshments and desserts (I always grab a couple bottles of water before heading into the park).
disneyland's fireworks can be viewed many miles away. mapquest disneyland and search near by hotels and it'll give you a list of all the hotels around it. look for the ones on the north side of disneyland. just make sure that you book the rooms facing disneyland.
ask the hotel which rooms has the best views of the fireworks and they should beable to tell you.
keep in mind if you stand in front of the castle you can see it over the castle. which means that it's shooting from the north part of disneyland because the castle faces south.
I always take the 5frwy and exit disneyland dr/ball rd exit and you can see the fireworks right by the ball and disneyway exit. it always feels like it's shooting right over that corner ( ball and disneyland dr.)
good luck.
